Informe científico-técnico «Papel de los cereales de grano entero en la salud» 2020

Los cereales constituyen la fuente principal de energía de la dieta en prácticamente todas las poblaciones del mundo. Tres de ellos, arroz, maíz y trigo, contribuyen con más del 90% de las calorías provenientes de cereales y representan poco más del 50% del promedio mundial de calorías dietéticas per cápita. Por ello no es sorprendente que los cereales tengan un impacto importante en la salud humana. Además de ser un componente casi universal de la dieta humana, los cereales son uno de los más antiguos, ya que fueron introducidos en el consumo habitual hace más de 10 mil años. Se considera que la domesticación y producción en escala de los cereales ha sido uno de los sostenes más importantes de la supervivencia de la especie humana.

Una parte importante de productos lácteos costarricenses manufacturados de forma artesanal, al igual que en otros países de la región y el Caribe, son elaborados en pequeñas plantas de procesamiento ubicadas en zonas rurales, en ocasiones con bajo nivel de tecnificación y con algunas oportunidades de mejora en el cumplimiento de las Buenas Prácticas de Manufactura (BPM).

Análisis del sobrepeso, obesidad, actividad física y autoestima de la niñez en el área metropolitana de la región educativa panameña

Los altos niveles de sobrepeso y obesidad que producen diabetes, hipertensión u otras enfermedades crónicas son un problema de salud pública, que inicia desde la infancia hasta alcanzar la edad adulta y alteran, directamente, la calidad de vida de la persona. El propósito de este estudio es determinar los niveles de sobrepeso y obesidad, los niveles de actividad física y de autoestima de escolares de 9 a 13 de edad, en 13 centros educativos de la ciudad de Panamá centro. Se evaluaron un total de 748 estudiantes.

Prevalencia de ingesta inadecuada de micronutrientes en la población urbana de Costa Rica

La inadecuación de micronutrientes es frecuente en los países en vías de desarrollo. En Costa Rica existe poca información acerca de la ingesta de micronutrientes y del impacto de los programas de fortificación obligatoria de alimentos. El objetivo de este estudio fue evaluar la ingesta de vitaminas y minerales y el aporte de la fortificación de alimentos a la ingesta total de micronutrientes en la población urbana costarricense.

Diversidad dietética y adecuación de micronutrientes en Mujeres en edad fértil: resultados de Estudio ELANS

La diversidad dietética, un componente importante de la calidad de la dieta, se asocia con una mayor probabilidad de ingesta adecuada de micronutrientes. Las mujeres en edad fértil son particularmente vulnerables a la insuficiencia de micronutrientes. La diversidad dietética mínima para las mujeres se ha utilizado ampliamente como una medida aproximada de la adecuación de micronutrientes.
