Food system activities are increasing putting pressure on planetary boundaries and the natural resource base which underpins food security for all. They are also accentuating the triple burden of malnutrition for many, and healthier diets derived from more sustainable food systems are needed. The triple 'Cs' of climate, covid and conflict, and other recent short-term shocks to the food system, have emerged against a background of longer-term stresses, adding the issue of food system resilience to the already-recognised sustainability agenda. There is therefore an urgent need for food system change both to improve health and environmental outcomes in fairer and more equitable ways, and to enhance resilience to further shocks and stresses. Building on the momentum from the UN Food System Summit and recognizing that the 2030 target year of the Sustainable Development Goals is on the horizon, this 5th Global Food Security Conference will bring together science, business and policy to address this need.

Aim

This training aims at providing state-of-the-art knowledge on the recent developments in toxicological hazard and risk assessment, with an emphasis on the application in food safety. A limited number of lectures will provide insight in these developments, emphasizing the role of so-called new approach methodologies (NAMs). In 2016, an ILSI Expert Group published a paper where a flow sheet illustrated the role of different aspects of the process of risk or safety assessment and thereby avoiding the use of animal models. Integrating these aspects, ranging from interpreting knowledge on the chemistry of compounds (and mixtures), exposure, in vitro toxicity and kinetic behaviour, may result in the possibility to predict safety. Course participants will apply the presented flow sheet for a selection of food ingredients in case studies. During the 2-day in person training, a manuscript will be drafted to publish the results of the case studies; participants have the option to be co-author of this publication. Participants are welcome to test the flow sheet on their own data.

• General overview of hazard and risk assessment procedures, past and future.
• Cytotoxicity, how to measure it and how to interpret it.
• Understanding mechanisms of action of toxicity: Adverse Outcome Pathways.
• Understanding the kinetic behaviour of chemicals in biological systems (in vitro as well as in vivo): short intro in Physiologically-based kinetic modelling (PBK).
• Quantitative In Vitro-In Vivo extrapolation (QIVIVE).

Transforming our food systems for sustainability and resilience is pertinent and urgent to achieve our EU Green Deal goals. The food system is highly complex, characterised by uncertainty, multiple drivers, impacts and interconnected sectors, requiring trade-offs. Acting simultaneously on many fronts is the only key to success. This is why we need a systems approach to understand the challenges and to target transformational change through a coherent set of policies, initiatives, and investments. The role of Research and Innovation (R&I) policy has finally been recognised as key to unravelling the complexities and catalysing solutions.

In 2016, DG Research & Innovation launched the Food 2030 initiative, which set out an ambitious and impact-driven R&I policy framework for sustainable food systems, that is being deployed via Horizon Europe.

On 4 and 5 of December 2023, the European Commission will organise a conference in Brussels entitled "Food 2030: green and resilient food systems" to showcase achievements of EU food systems related projects, explore future research and innovation orientations and levers of change. The EC aims to convene a wide range of actors and policy makers for this in-person event, which will also be web streamed and recorded for those unable to travel.
