Food processing is at the heart of modern food systems, ensuring safety, quality, and affordability while meeting the nutritional needs of a growing global population. It plays a crucial role in improving food availability, convenience, and shelf life. However, traditional processing methods can sometimes lead to nutrient loss, degradation of bioactive compounds, and reduced dietary fibre content.

Traditional processing methods can sometimes lead to nutrient loss, degradation of bioactive compounds, and reduced dietary fiber content and with advancements in technology, modern food processing is evolving to not only preserve but also enhance the nutritional value of food.

However, there are several misconceptions about food processing technologies, as they are often mistakenly viewed as the same as food formulation. It is important to dispel this and provide correct information on how latest food processing technologies are contributing towards food and nutrition security, food safety, and health. To address this, ILSI India is organizing the INTECH 2025 - Conference on “Innovations in Food Processing & Flavor Technologies: Advancing Safety, Nutrition and Health” on 9 December in New Delhi. This one-day conference is being held in collaboration with ICAR– Central Institute of Post Harvest Engineering & Technology, Ludhiana; National Institute of Food Technology Entrepreneurship and Management, Kundli; National Institute of Food Technology Entrepreneurship and Management, Thanjavur; the Ministry of Food Processing Industries (GoI); and Indian Institute of Technology Roorkee.

This Conference will discuss how Modern Food Processing Technologies can be harnessed to create healthier, More Functional Foods — Improving Digestibility, Bioavailability, and Nutrient Quality without Compromising Taste and Consumer Appeal.

 

The deliberations will also explore: Challenges Related to Nutrient Retention, Anti-Nutritional Factors, and Food Safety and Integration of Traditional Knowledge with Modern Food Processing Innovations for Industrial Applications.

 

31 Experts from Government, Industry and Academia will address the Conference in 4 Technical Sessions:
