These proceedings describe the symposium on water related-issues which was jointly hosted by ILSI South Africa, the African Center for Energy and the Environment, the University of Pretoria, and the International Water Association in November 2000. While covering a variety of water issues, the symposium had a particular emphasis on the re-use of water in the food and beverage industries.
