Background

The development of new technologies and digitalization is changing with each passing day, and human society is about to enter the era of artificial intelligence. The introduction of artificial intelligence is to improve the well-being of human life. Therefore, its application and development in food safety and food science and other people's livelihood issues are particularly interesting and expected. Big data analysis provides more scientific and quantitative discussion bases, and artificial intelligence algorithms can assist risk prediction and early warning so that risks can be prevented.

To have a better grasp of the trend and meet the advent of big data and the era of artificial intelligence, ILSI Taiwan held a symposium on new technology application in food safety management and food industry on May 29, 2019, inviting experts in the field of industry, government, and research to share new knowledge and practical experience of big data application, blockchain application in modern fresh food supply chain, and new technologies applications in food science research & development. It is hoped that through exchanges and discussions, the safety and confidence of Taiwan's food consumption will be enhanced, and new efforts will be injected into the innovation and development of the industry.
