Seminar Socialization of Biotechnological Food Risk Analysis Processes in Mesoamerica

The technologies for the improvement of plant and animal species that are used as the basis of our diet, take advantage of the existing genetic variability and also generate it in different ways, in order to select those most desirable characteristics in the new varieties. These manipulations have allowed us to obtain substantial improvements in the availability and quality of food throughout the history of mankind. From the point of view of safety, food risk analysis is a relatively new methodology, being the history of use and customs, the most used acceptance criteria for food.

Numerous international organizations such as FAO and WHO (the Food and Agriculture Organization and the World Health Organization, respectively), have dealt with the biosecurity of new technologies applied to food production. In a joint 1991 report, these organizations claim that “biotechnology has a long history of use in food production and processing. It represents a continuous embrace between traditional breeding techniques and the latest techniques based on molecular biology. "."The use of these techniques does not result in inherently less safe foods than those produced by conventional techniques. "

The Biotechnology Committee of ILSI Mesoamerica will be organizing this symposium whose objective is the training of officials and businessmen in the processes of risk assessment and analysis of food from genetically modified organisms, for the event there will be the participation of government guests from Guatemala, Honduras, and Costa Rica.
